My Best Dish Is…

What food would you say is your specialty?

There are five dishes that my family and friends request the most when I’m cooking (my apologies for the photos. Several were taken years ago with a cruddy camera phone, before I thought about using them for a blog post. I need to take new ones when I make them again, now that I do food photography):

Triple Crockpot Pizza Casserole


Pressure Cooked (or Oven Baked) Ribs


“Bear Down, Chicago Bears” Chili


Pressure Cooked Korean Red Pepper Wings


Chicago Bears “Tackle” (Taco) Salad


As you can see, this is a family of carnivores.

I would like to think that my best dish is my Chili, which gets the most love when I’m making it. I also won 1st place in a Chili cook-off with it.

But it still doesn’t compare to the batches my Aunt Dee and my father used to make. I wish I had gotten either of their recipes.

The winner is actually my Taco Salad! It’s the most requested of them all and my most sought out recipe.

Two quick funny stories about my best dish:

One friend (whose children always ask if “Mr. Kenny is going to make his Taco salad” whenever they come over) asked for my recipe. Fashioning herself as an expert cook, she decided to modify it, thinking she could outdo it.

The verdict? After trying it, her youngest son boldly told her…

“I’d rather have Mr. Kenny’s.”

Serves you right, mom!

The second story is about my friend, who often eats two to three bowls per visit. We talked about the fact that I had to make it again the coming weekend for a football tailgate party. She promptly invited herself before I could and then, while eating, she shamefully asked, “Am I wrong for not wanting anyone else to get some of this?”


I take both incidents as compliments and the recipe is rather simple. Still, it’s what they want.

Do I consider myself an excellent cook? Nope. And I’m definitely not a better cook than my wife. It’s just that anything I make has to be something other than the norm. So I’m often either trying bizarre recipes or creating my own dishes based on the things my children like.

This makes me the winner when she’s making her comfort food such as spaghetti and meatballs, her favorite dish. But she’s still much better than I will ever be.

The Korean Sauce Red Pepper Wing recipe is not posted because my signature sauce is no longer sold in local stores. When I find a suitable replacement or make my own, I’ll be sure to post it.
